Thai Steamed Banana Cupcakes
Servings: Makes about 8 cupcakes
Time: 30-45 min
Ingredients:
– 1/3 cup mashed ripe bananas
– 3/4 cup cake flour
– 6 1/2 tbsp sugar
– 1/2 cup vegetable oil
– 1 medium egg
– 1/2 tsp lemon juice
– 3/4 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt (optional)
Directions:
1. Combine flour, baking powder, baking soda, and optional salt. Set aside.
2. In a separate bowl, mix the egg, sugar, and mashed bananas.
3. Add oil to the banana mixture and stir.
4. Combine the flour mixture and the banana mixture. Stir by hand until well combined.
5. Add lemon juice and stir.
6. Pour into a lined cupcake pan and cook in a steamer for 15-20 minutes. If you don’t have a steamer handy, you can also bake in a preheated oven at 350 degrees for 20-25 minutes.
